It’s me, Shannon. For years I’ve been telling myself I’m a writer, but I am also so much more. I’m a single mom, and proud of it. I’m an attorney. I’m an artist. I’m a musician. I’m fun, creative, and love having new adventures. I believe that life is a constant journey, and the world gives us so much to learn about and to learn from.
Ten years ago my son was diagnosed with multiple food allergies and a condition called Eosinophilic Esophagitis. For three years he did not eat regular food; he survived on elemental milk. We went through several food trials until we finally found the right foods and medical staff that believed that one day he would be able to eat regular food. It is time for me to share the wealth of knowledge I have gained as we’ve combated this condition. We are nutrition warriors, and are continuing to change the way that others perceive children with food allergies. I refuse to allow food allergies and EE from preventing my child from living a full life. My focus is on what he CAN eat, and there are so many goodies out there that can be made without wheat, dairy, eggs, peanuts, tree nuts or soy!
