Homemade seafood and chicken paella my family and I made for my father’s birthday.
We used some of our favorite seafood: crab, lobster, octopus, shrimp and mussels. Instead of using water, I substituted chicken broth. Additionally, I omitted the peas due to my son’s allergy. Instead, there were lots of sliced bell peppers, saffron, and Bijol, a cuban spice blend used by my grandmother. The best rice to use is paella rice, since it is short grain.
We loved this paella so much, we are going to make it again. Having a paella pan also makes a huge difference!
